Bing, Bang, Cherries Galore

Nothing like summer and cherry season to bring me back into a pie mood. I've been in Washington State for a couple of weeks, basking in the clean air and ripe free fruit everywhere. Oh so much has happened, but it's the usual variety of writing, teaching, graduating, hemming, hawing, moving, going to my mother's wedding ... so I'll skip it and get right to the baked goods. First up is Bing Cherry Pie -- not your traditional cherry pie, i.e. sans the sour cherries, and with a whole wheat crust to boot. I'll admit, it tasted very healthy, so...not as delicious as other pies. It's very hearty, though, and it's pretty, with all the burgundy. Bing cherries are the matrons of all cherries. They're not coy. They get down to business. In eighth grade I had to write a five paragraph essay following the "bing, bang, bongo" model: intro, bing idea, bang idea, bongo!!! idea, conclude. Dull as cardboard, but it did teach me to Organize My Writing.

Anyway, recipe soon! It's good to be back. I've got plenty up my sleeve.

Made For Each Other: Strawberry Rhubarb

This is a summertime classic, warm and gooey, with sour rhubarb to offset the sweet-but-predictable strawberry. It's a family favorite and definitely one of my pie staples. Plain old strawberry pie verges on saccharine, so you need the rhubarb to kick it up. You know how it is. The best couples usually have a sweet/sour factor going for them - good cop/bad cop, social butterfly/nerd, dreamer/breadwinner, Obama/Biden. Rhubarb is grown in huge quantities in the Northwest but it's hard to find in Texas. In fact, I bought a bunch at the grocery store here and the chec ker asked, "what is this? Is it some kind of red celery?" Gasp, no. It is heavenly. For this pie, I like to go fifty-fifty on the rhubarb to berry ratio, and I slice the strawberries only in half, so you get nice fat bites of them. Chocolate Cream Bliss

I'd always looked down on cream pies - at our house we were fruit pie purists, and I only saw cream pies at chain restaurants, drooping under too much Cool Whip. Then I made key lime pie (custard, I suppose, but cream pie-ish) and my tastebuds were opened. Cream pies made from scratch are de-LICIOUS. Oh my god. Silky and decadent without being too sweet. And they're not hard, though there are a few more steps than with fruit pie. I've made this J.O.C. chocolate cream twice and like it best with whipped cream and a butter crust; graham cracker would probably be good too. Oh, and I added a secret strawberry layer. There must be a metaphor in that, but I slipped them in because my friend requested chocolate mousse with strawberries, and this was as close as I could get.
